Spiced Ginger Cookies

Ingredients:

  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 1 cup unsalted butter at room temperature, cut into cubes
  • 2 large eggs
  • 1 tablespoons vanilla extract
  • 4 tablespoons chopped crystallized ginger

Directions:

Preheat oven to 350 degrees F.

In a large bowl, whisk together the flour, salt, nutmeg, baking soda, cinnamon, and ground ginger. In a different mixing bowl, add the sugar, brown sugar and butter. With an electric mixer, beat until fluffy, about 2 minutes. Add eggs 1 at a time until well incorporated. Scrape the bottom of the mixing bowl with a rubber spatula, add the vanilla extract and the crystallized ginger and mix well. Once the wet ingredients are incorporated, add the flour mixture in batches. Mix until the dough begins to form into a ball. Using an ice cream scoop, place the dough onto 2 parchment-lined sheet pans about 2 inches apart. Press the dough with the back of a spoon. Bake for 12 to 13 minutes. When the cookies are done, transfer them to a wire rack to cool.

Fathers Day Chocolate Baseball Cookies

  • 1 c Sugar
  • 1/2 c Packed brown sugar
  • 1/2 c Unsweetened cocoa powder
  • 2 ts Baking powder
  • 1/2 ts Cinnamon
  • 2 Eggs
  • 1/2 c Cooking oil
  • 1 ts Vanilla
  • 1 3/4 c Flour
  • 1/2 c Chopped walnuts
  • 1/2 c Sugar

Preheat oven to 375F.

In a large mixing bowl stir together the sugar, brown sugar, cocoa powder, baking powder and cinnamon. Add the eggs, cooking oil and vanilla.

Beat with a rotary beater or wire whip until the mixture is smooth. Add the flour. Stir with a large spoon until the mixture is smooth. Stir in the walnuts.

Place the sugar in a pie plate.

Spoon chocolate mixture by rounded tablespoonfuls onto waxed paper. Roll each mound around in your hands to form a ball. Roll the balls in the sugar to coat generously.

Place the balls 2 inches apart on an ungreased baking sheet.

Bake at 375F for 12 to 14 minutes or until the cookies are firm around the edges and the tops are cracked.

Cool on a wire rack. Makes 24 cookies.

Cool Whip Cookies Recipe

Ingredients:

  • 1 (8 ounce) container frozen whipped topping, thawed
  • 2 eggs
  • 1 (18.25 ounce) package lemon cake mix
  • 1/3 cup confectioners' sugar for decoration
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  2. Beat together the whipped topping and eggs together. Add the lemon cake mix and continue to mix. Dough will be thick.
  3. Drop by teaspoonfuls into a bowl of confectioners' sugar and roll to coat. Place cookies on the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 8 minutes.
