Easy No Bake Cookies

2 cups Sugar
1/2 cup Butter
4 tbsp Cocoa powder
1/2 cup Evaporated milk
1/2 cup Peanut butter
3 cups Oats
1/2 tsp Vanilla extract
1/4 tsp Salt

Combine the sugar, butter, milk, salt and cocoa powder into saucepan, bring to boil for about 1 minute. Remove from heat. Stir in vanilla extract, peanut butter and oats. Mix well. Drop mixture by tablespoonfuls onto waxed paper.

Diabetic Peanut Butter Cookies

1 c. flour
1/2 c. creamy peanut butter
1 egg
1 tsp. vanilla
1/4 tsp. salt
1 1/2 tsp. baking powder
1/2 c. water
1 tbsp. liquid sweetener
1/2 c. salad oil

Mix all together in a large bowl. Shape into balls and place on ungreased cookie sheet. Bake at 375 degrees for 12 to 15 minutes.

Peanut Butter Cookies

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup peanut butter

1/4 cup butter or margarine -- softened

1/4 cup shortening

1 egg

1 1/4 cups all-purpose flour

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

Granulated sugar

Heat oven to 375ยบ. Beat 1/2 cup granulated sugar, the brown sugar, peanut butter, butter, shortening and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda, baking powder and salt.

Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten slightly in crisscross pattern with fork or potato masher dipped into granulated sugar. Bake 9 to 10 minutes or until light brown. Cool 5 minutes; remove from cookie sheet to wire rack
